Sian Griffiths spoke to the Sustainable Restaurant Association (SRA) at Caffè Culture 2015 about improving the sustainability of restaurants.
The SRA is a not-for-profit organisation dedicated to supporting restaurants with a sustainable attitude to sourcing, the environment and involvement in the community. Their independently-verified sustainability rating system (one, two or three stars) helps diners make more informed choices when eating out.
Raymond Blanc OBE has been president of the association since 2012.
