Limagrain Céréales Ingrédients has launched a new toasted corn flour ingredient to its Taste & Colour range.
The flour was developed ‘to meet the growing needs of the industry for natural ingredients’, Limagrain said, and draws on the company’s proprietary toasting technology.
With a yellow/beige colour and toasted hazelnut flavour, the toasted corn flour can be used in a number of applications including for bread-making products (bread and Viennese pastries), laminated doughs, snacks such as tortilla chips, dairy products and breadcrumbs.
Depending on the desired intensity of the flavour, the flour, also available in a Gluten Free version, can be reworked using different levels of toasting.
“For over 30 years, we have invested not only to create the cereal varieties of tomorrow, but also to develop our cereal processing tools and technology. The use of milling, extraction of hominies, grinding, debacterization, thermal processing, extrusion and mixing processes, as well as a toasting tool in the past year, all enable LCI to meet specific requests for innovative and functional ingredients,” explained Patricia Panel, Head of Marketing.
