and Valerie Le Bihan, global microalgae products manager, strategic marketing food nutrition health, shared their excitement for the Fi award-winning microalgae high lipid algal flour. I tasted a delicious brioche with no egg or butter, 70% less fat, and all the taste and texture of a full fat standard. Very impressive and exciting product! Congratulations Roquette!
Michael Gusko of
Kampffmeyer
explains the secret behind the company’s ‘magical’ Gecko Ultra – seed glue. Based on special flour and process technologies with water, Gecko creates a transparent layer on rolls and pastries that effectively sticks any seeds, nuts it flake toppings firmly in place throughout the life of the product, saving on list seeds and nuts and enhancing the look of the final product. Gecko has been five years in the making!
I have just tried some delicious sausage with 50% reduced sodium on the
Jungbunzlauer
stand. Created using potassium lactate to replace sodium lactate in the formulation, plus Jungbunzlauer’s new Sub4salt Cure (with 35% reduced sodium) for the curing, the sausage was juicy and delicious. Nice work Agata Kulik, junior product manager specialties and Hans-Peter Froschauer, product group manager specialties!

(left) and Dariela Roffe-Racking, regional director, Europe, together with Chef John Csukor, surprised and enthralled me with some of the most delicious products containing almonds in the most fascinating forms on their stand. Almond creams that replace dairy in choc fillings, or even almond yogurt are possible. Amazing!
