Archer Daniels Midland (ADM) has introduced a new sodium reduction technology for use in meat applications, after combining its flavour expertise and meat capabilities.
Studies have shown that lowering salt consumption by 3g per day may have a significant impact on the risk of developing cardiovascular disease by 16% and strokes by 22%, ADM said. But salt’s crucial formulation benefits – the enhanced taste, improved texture and ensured product preservation, as well as increasing the meat’s water-holding capacity – make it difficult for food manufacturers to reduce the salt content of processed meats.
The SaltTrimR product range includes a variety of solutions designed to reduce sodium levels in meat applications by to up 30%. Sea SaltTrimR, part of the SaltTrimR range, is based on sea salt, which is naturally rich in potassium chloride and other minerals, ADM said. The combination of Sea SaltTrimR with ADM’s natural flavourings delivers full salty notes without the bitterness that is usually associated with potassium.
The company has also unveiled Salt Enhancer, a natural flavouring designed for food with low sodium levels. It facilitates the removal of up to 30% sodium from product formulation while preserving the product’s salty taste and mouthfeel. Presented in a dry powder form, Salt Enhancer can be easily blended with other dry ingredients and is suitable for a wide range of applications including fresh processed meat, cured meat pieces, raw-cooked and precooked products, as well as raw and dry meat. SaltTrim products and Salt Enhancer are both temperature stable, kosher and halal certified.
