Arla Food Ingredients has released a new whey protein ingredient to help meet the demand for high-protein, clean-label yogurts.
Nutrilac® FO-7875 will enable manufacturers to create “both drinkable and spoonable” yogurts with a significantly higher protein content than the average product, which the company says generally ranges from 5% to 9%. The new ingredient will allow the creation of, for example, drinking yogurts with 11% protein and only 0.8% fat.
Produced in Argentina, Nutrilac® FO-7875 T is said to deliver a “creamier and smoother texture” than other low-fat recipes and does not require the addition of stabilizers, making it a cleaner labelled product.

It can be used to create clean-label yogurts that are not only rich in high-quality protein, but also low in fat, as well as smooth and creamy.
