Arla Food Ingredients has released a new whey protein ingredient to help meet the demand for high-protein, clean-label yogurts.
Nutrilac® FO-7875 will enable manufacturers to create “both drinkable and spoonable” yogurts with a significantly higher protein content than the average product, which the company says generally ranges from 5% to 9%. The new ingredient will allow the creation of, for example, drinking yogurts with 11% protein and only 0.8% fat.
Produced in Argentina, Nutrilac® FO-7875 T is said to deliver a “creamier and smoother texture” than other low-fat recipes and does not require the addition of stabilizers, making it a cleaner labelled product.
Ignacio Estevez, application manager, South America at Arla, said: “Nutrilac® FO-7875 meets a range of market needs. It can be used to create clean-label yogurts that are not only rich in high-quality protein, but also low in fat, as well as smooth and creamy. This combination of benefits will allow even more manufacturers to expand their lines to include premium products that enhance brand image.”
