Chr. Hansen has extended its white cheese starter culture range with the launch of DVS White Flora, which consists of three cultures that “aid the formation of rich and aromatic notes in white cheese”.
The first stage in cheese making is to ferment milk sugar into lactic acid using a starter culture. Chr. Hansen said this is where cheesemakers can benefit from DVS and “create complex flavours and delicious taste development during fermentation”.
The strains used in the new culture system are selected from 30,000 strains to ensure performance. The three cultures systems within the DVS series achieve the same acidification and have the same tolerance to salt and temperature.
Chr. Hansen said that with the global growth of white cheese, customers are now seeking new taste experiences and expect convenient formats, such as sliced, cubed and crumbled white cheese, for use at home or in the foodservice industry.
Jens Skytte Soerensen, commercial development manager for white cheese at Chr. Hansen, said: “Cheesemakers are challenged to create appealing cheese while staying competitive. They want to increase their efficiency and yield.

The DVS line is part of a range of cultures and enzymes from Chr. Hansen that aim to help cheesemakers secure product differentiation. All cultures within the range offer different flavour notes, nuances in texture and are developed specifically for white cheese.

Earlier this year, Chr. Hansen’s board of directors appointed Mauricio Graber as CEO, to take over the role from current CEO Cees de Jong on 1 June 2018.
