In UHT, the latest technology “gives you very, very good taste,” said Carrigan. “The steam infusion, or indirect heating – rapid heating, rapid cooling – is always moving ahead, and because we’ve just built our plant, and because we’ve gone to experts worldwide, we’ve specified the best possible plant that gives the best possible taste for our UHT milk or our UHT lactose-free milk, or indeed whipping cream, regular cream and single cream.
