There was a time when pistachio was a novelty and now frozen yogurt can sound like a modern, healthier choice. But the choice is becoming yet more mouthwatering and indulgent, and entering totally new sectors.
In our recent World Dairy Innovation Awards, a substantial number of entries were in the ice cream and frozen yogurt categories, and this growth value category is the focus of a report in the just-published issue of Dairy Innovation magazine.
Delegates at this year’s World Dairy Congress in Istanbul were introduced to a rare, new ice cream called Nice Dreams, containing hemp. This is the brainchild of Bebida Beverage Company owner Brian Weber and is linked to the Cheech & Chong comedy duo of the 1970s. It’s certainly a new take on food functionality and relaxation.
In our research for the Special Report section of the magazine, we found plenty of ideas for unique ice cream flavours. These listed here struck us as particularly fun and probably a prelude to something a little tamer in the commercial sector:
