The first store is due to open in London this September, with plans for an initial portfolio of 15 stores nationwide. The new business has been funded by Odey Asset Management. The stores are expected to have the look of a food hall, with butchery, bakery, prepared food counter and fresh produce section, alongside a cafe.
Retail director, Martyn Barrett, previously worked with the Selfridges food hall and has been joined by a former Whole Foods employee Aylie Cooke as head of buying.
According to its website, Union Market “brings together a team whose collective passion, wisdom and expertise will charm, delight and move you in equal measure.
“Our spirited attitude will define modern British cuisine and celebrate its amazing quality and diversity. We’ll create a truly global business of British food and drink and put the UK firmly at the heart of the world food map. We are brave and discerning enough to stock the best – organic or not. Where possible, we will bring you what is sourced locally or regionally and only when it is in season.”
