Nicole Patterson Lett is business development manager for Leatherhead Food Research and has recently carried out a primary consumer research study into reformulation. Consumers are looking for a reduction into sugar, salt and fat and are very much label readers looking for natural ingredients. They see savoury snacks, bakery products and cereals as needing improvement in terms of reformulation.
She talks about the ingredients that consumers do not understand including malitol, xylitol and even Stevia.
