Robin Skailes, director of Cropwell Bishop Creamery in Nottinghamshire, talks about the ability of cheesemakers to reproduce continental-style cheese and the company’s success in the Waitrose Way Sustainability Awards.
He discusses the development of this ‘much in demand’ soft blue cheese, Beauvale, which is similar in taste to Gorgonzola and Dolcelatte, yet made with British milk from the Lake District.
“Consumers are after a softer textured cheese that isn’t as strong as before, with a creamy melt-in-the-mouth taste,” he said, “so we have worked hard to produce that.
“Other cheeses in the UK have evolved too, and Cheddar now is much sweeter and the crystals add that crunch that people like. Like every industry, you have to move with what people want and the cheese industry is no different.”
