Entrants in the best new condiment or marinade category at the IFE World Food Innovation Awards 2016 represented five of the best products in the dips, sauces and flavours segments.
The Foraging Fox’s hot beetroot ketchup is a spicy take on the brand’s beetroot ketchup, featuring a gentle and earthy heat from chilli-infused beetroot and horseradish. It is 100% natural and contains no artificial colours, flavours or sweeteners, the brand pointed out.
Newcomer Stanley’s billed itself as “the first condiment to use black garlic”, a type of caramelised garlic made by heating whole bulbs over the course of several weeks. The process leads to a less pungent flavour than standard garlic, which makes way for a fruit, roasted and sweet taste.
Continuing the trend in “unique” propositions for the condiment category was Mara Seaweed’s all-round, shake-on flavour tin. Called Shony, it is naturally rich in essential minerals and offers consumers an umami-rich alternative to salt.
It was joined by FortiSalt from Mineral Resources International, which can enhance the flavour of foods containing sodium while reducing their salt content by as much as 50%. The product will help to lessen consumers’ dependence on salt, the company claimed.
There was also Vini & Bal’s three-product range of Indian curry sauces, prepared using home recipes, real ingredients and the finest blends of authentic Indian spices. The brand focuses on Punjabi foods from Northern India; its Shahi, Jeera and Mirchi variants of masala sauce offer a perfect base for dishes containing meat, seafood, vegetables and paneer.
And Duke’s mayonnaise in 8oz pouches from ProAmpac has sought to disrupt the mayonnaise category with its ergonomic design, reclosable flip-top spout and reduced chance of cap loss. It offers both single- and multi-use portability on the go, and has been dubbed “a first for mayonnaise”.
