Waitrose is the only supermarket to stock organic British mutton, which will be seasonally available from November to March, in 10 stores.
Reared on the mountainous uplands of Wales, the Welsh Mountain sheep graze on grass and heather. The official classification for mutton is sheep over two years of age, giving the meat an added depth of flavour, the supermarket said.
Tom Richardson, Waitrose meat buyer said: “For the tenderest melt-in-the-mouth mutton, cook it long and slow. We recommend slow-roasting, braising or simmering it for a broth-it is the perfect partner for rich winter warming stews and casseroles.”
