End of the Line – the hard-hitting documentary on the issue of over-fishing – was a hot topic of debate at Allegra Strategies’ inaugural UK Restaurant Leader Summit. Speakers and attendees took the floor on the issue, demonstrating awareness and consideration.
The key messages of the day were the legacy of the recession-informed consumer, devaluation of brands through discounting, unemployment a key indicator of eating-out behaviour, this being the time to negotiate property leases and a time to buy restaurants. Also on the agenda were ensuring good relationships with talent management, customer service excellence more important than ever, and above all a passion for product and authenticity.
In what was a day of sharing insights, lively debate and fascinating viewpoints, industry veterans and celebrity chefs mingled and debated with innovators and entrepreneurs.
The overall message of the day was that the industry is strong and resilient, that recession is cyclical and that survival is dependent on preparation, innovation and controlling costs without affecting quality of food or attentive and superior customer service.
