The clear winner was cave-aged Kaltbach Le Gruyère AOC from Emmi.
Christian Rach has been testing products he buys in the supermarket regularly since the start of this year, and gives detailed results of his tests on his website. The TV chef aims to help orient consumers in their daily shopping with the Rach getestet seal of approval.
Rach said: “Whether cut into chunks or slices, Kaltbach Le Gruyère AOC has the type of wonderful aroma that you usually only find with cheeses from the cheese counter. It tastes as if a Swiss master cheesemaker has cultivated and nurtured the wheel over many months, before it is packed in individual pieces.”
SGS Institut Fresenius supports the findings of the TV chef’s independent test. The institute performed various laboratory tests on the cheese, including sensorial tests, a nutritional analysis and a microbiological analysis. The Rach getestet seal of approval not only certifies the excellent flavour of Kaltbach Le Gruyère AOC, but also the product’s high quality.
The secret of the taste of Kaltbach cheese lies in its careful treatment by Emmi master cheesemakers and at least 300 days of maturing in the Kaltbach cave. The cave’s sandstone, which maintains constant humidity and temperature all year round and ensures mineralization of the air, is what makes it unique. This enables a completely natural maturation process, the company said.
