DuPont Nutrition & Biosciences has announced the global launch of its Yo-Mix Prime culture series for yogurts, which can reportedly help yogurt manufacturers meet a range of challenges from product stability to formulation cost.
According to DuPont, the advantages offered by the new Yo-Mix Prime series include full pH control that also allows for more process flexibility, allowing higher production output and reduced yogurt waste, as manufacturers will have full control of product acidity before cooling and packaging.
DuPont claims that the new culture series can also help yogurt manufacturers to create yogurts with “ultimate mildness” and a “premium texture”, as well as lowering the amount of sugar needed in the production process.
Skimmed milk powder is often added to yogurts in the manufacturing process to boost yogurt texture, but DuPont claims that the addition of the cultures reduces the required amount of skimmed milk powder during the formulation process. DuPont also attests that the culture can help to ensure that the quality of yogurt products remains stable throughout distribution.
Morten Boesen, global product line manager for dairy cultures at DuPont Nutrition & Biosciences, said: “We understand that yogurt manufacturers have a vision of how their ideal fermented dairy products will turn out, and sometimes the ingredients may hold them back.
