Poco, run by Tom Hunt, Ben Pryor and Jen Best, won the Environment Award at the 2013 Sustainable Restaurant Association Awards and was ‘highly commended’ in the Unilever Food Solutions Food Waste Strategy Award.
Believe it or not, the restaurant claims to be 95% waste free, which is quite an achievement. For instance, leftovers are served free to customers as tapas.
I live in Bristol and look forward to booking a table soon, to see first-hand how the future of restaurant management tackles important environmental concerns.
