Cargill has unveiled its EverSweet next-generation sweetener made from stevia leaf, designed to help in food and drinks companies’ search for sweetener options to satisfy consumer health demands without sacrificing on taste.
EverSweet is a zero-calorie sweetener made with the same sweetness found in the stevia leaf, Reb M and Reb D, and provides consumers with the taste that they crave with better sweetness intensity, faster sweetness onset and improved sweetness quality, Cargill said. It is also free from the bitterness or off-note aftertaste commonly associated with stevia.
Because the stevia plant produces only trace amounts of these molecules, using Reb M and Reb D to produce a sweetener hasn’t been commercially or environmentally viable until now with fermentation.
EverSweet is expected to be commercially available in 2016 after debuting at SupplySide West in Las Vegas this October, the company said.
