Nor-Lake, the US-based manufacturer of refrigeration equipment for the foodservice industry, has introduced a new line of refrigeration cabinets with a system designed to “rapidly and uniformly” chill and freeze hot foods.
The Chill Smart Blast chiller freezers quickly reduce the temperature of hot foods to below 40°F – eliminating the threat of bacterial contamination – and can also enhance food safety and extend storage life.
The cabinets are capable of chilling product from 194°F to 37°F in 90 minutes as part of a cycle, while the freezing process will take the food from 194°F to 0°F in 240 minutes. This chilling process not only minimises microbial activity in food, improving food safety, but also increases food productivity by allowing partially cooked items to be completed in a fraction of the time.
All Nor-Lake Line models come standard with exclusive Food Identification Controller technology, which automatically adjusts blast-chilling cycles with a single multi-sensor probe, and prevents surface freezing and degradation while preserving the nutritional values of the food by monitoring temperatures in the core, beneath and on the surface.
Stainless steel construction inside and out provides durability, Nor-Lake continued, while rounded corners on the inside make cleaning simple. And all models feature 20 preset blast-chilling cycles, a USB port to download data for simple and dependable application and a multilingual, multi-sector LCD control board that displays interior temperature, product temperature and ventilation speed.
