Bakery specialist Bridor has launched a new range of gluten-free briochettes, madeleines and both plan and mixed seed bread rolls.
The new collection “manages to maintain the textures usually associated with conventional bakery products” and achieves a flavour profile to match. The products replicate the visco-elastic properties of conventional breads and pastries thanks to a mixture of millet, rice and buckwheat flours; this characteristic is essential to the texture and mouthfeel of a product, Bridor said.
“Apart from the exceptional taste and texture, the main advantage of the Bridor gluten-free range is its convenience”, the France-based company added. “Since the collection is ready baked, items merely need to be thawed [for] a few seconds in a microwave.”
It cited statistics from the Association Française Des Intolérants Au Gluten that suggested one person in every hundred in Europe and North America has an intolerance to gluten, resulting in a greater proportion of people choose not to consume conventional breads and pastries, as evidence for the demand for such products.
The company will debut the range a the International Food Exhibition later this month.
