Eric Bosly, global commercial director at Cosucra, spoke to Bryony Andrews at FIE 2019, to explain the paradox of the consumer who wants products with more fibre, protein and plant-based ingredients – but who is not willing to compromise on convenience or taste.
“All Cosucra’s ingredients are natural – that’s very important for us, because we believe people want plant-based products because they care about our planet and want to reduce the CO2 footprint of their diet.
“A key challenge is that people want to have clean labels,” he continued. “That means we need to use natural ingredients, not modified – it takes a really big effort in formulation to bring together new ingredients that offer products with great taste. It’s a challenge, but it’s a challenge that I feel we’ve been able to achieve with what we are presenting at the show today.”
