EHL Ingredients has launched six new herb and spice blends as it aims to offer food manufacturers and caterers an international twist on traditional Christmas recipes.
The savoury blends are said to include traditional and more unusual seasonal herbs and spices, while the sweet mixed spices are suited for Christmas puddings, stollen and fruit loaves.
Available in the UK, the blends include: beef, consisting of black pepper, chilli, cumin and coriander; game, featuring fennel, black pepper and juniper; fish, with lemon, pink peppercorns, dill, paprika and cumin; vegetable, including cumin, paprika, turmeric and black pepper; sweet spice, with cinnamon, allspice, cloves, nutmeg, black pepper and ginger; and ‘gluhwein’, consisting of cassia, ginger root, nutmeg, star anise, allspice and black pepper.
EHL Ingredients said the festive blends are an addition to its seasonal range which is designed to add alternative flavours and textures to Christmas dinners, and tap into consumer interest in world cuisine.
Kath Davies, new product development manager at EHL Ingredients, said: “We know that not everyone chooses a turkey for Christmas dinner with many consumers are now opting for beef, game and whole fish, such as salmon or seabass, as well as vegetarian and vegan alternatives.
“Modern Brits’ tastes are changing and people are looking for variety, new and interesting flavour combinations, and unusual dishes at Christmas group gatherings. Food manufacturers and foodservice outlets should offer alternatives to traditional turkey dinners over the festive period and our new blends allow them to develop appealing dishes to suit modern palates.

Available in bulk, the blends are suited to food manufacturers and foodservice operators to add to prepared foods or package into smaller bags or boxes to be sold on supermarket shelves for consumers to use at home, EHL said.
