The Californian prune growing industry is rejoicing after the state’s prunes were used in two signature Christmas puddings this season.
Harrods’s revered Victoria plum pudding has been developed by The Greencore Group, incorporating the highest quality prunes from California. In addition to this, celebrity chef Heston Blumenthal’s much-anticipated seasonal collection for Waitrose includes an indulgently rich chocolate Christmas cake that contains 13% Californian prunes to deliver added moisture and the perfect complementary flavour to the featured Belgian chocolate cake and marzipan ganache combination.
Commenting on the two new products, Mark Dorman, international marketing director for the California Prune Board (Europe), said: “We are thrilled to see California Prunes being recognised by not just one of the UK’s most innovative chefs but also by two of the country’s most prestigious retailers. Prunes are an incredibly versatile culinary ingredient, which can be used to improve the texture of baked goods, adding flavour and moisture while reducing the fat.
