Cream Supplies has added two new micro-strainers to its portfolio in 100 and 200 micron options.
The new Superbags have a 2l capacity and are made from tough, dishwasher-safe nylon strands that mean they can be safely re-used for different foods without fear of flavour contamination. Priced at £5.99, they provide food manufacturers with a practical and hygienic alternative to muslin, according to Cream Supplies.
The micro-strainers “will help ensure consommés, infusions, stocks and broths can be clarified perfectly,” the company said.
“However, they have multiple uses beyond this and inventive chefs and bartenders can use them to strain infusions and decant wines. They can also be filled with purées and immediately squeezed to release a solids-free liquid, a technique that was used at El Bulli to extract fresh almond milk. Alternatively, gravity will slowly release liquids from purées placed in the bags to make delicious, intensely flavoured ‘waters.’”
