Ideal for creating great-tasting lactose-free dairy products is the new neutral lactase enzyme Maxilact LGi. It’s able to reduce sugar content by up to 20% in all kinds of flavoured dairy products.
Juice processors can get more from their red fruits using the enzyme Rapidase Pro Color, typically yielding 95% juice extraction compared to only 75% without enzymes. As well as saving around 20% in production costs, a new DSM report shows that the use of enzymes doubles the amount of the antioxidant anthocyan present in coloured juices and increases consumer appeal.
