DuPont Nutrition and Health has created a new antioxidant ingredient for use in cereal and granola products.
DuPont’s new Guardian Toco 30P antioxidant is made from naturally-sourced tocopherols and is available in a powder form.
The ingredient is now available to manufacturers, and DuPont says that the powdered ingredient is an easier to use and more convenient antioxidant protection product than a liquid tocopherol.
The powdered product was “found to significantly inhibit oxidation of cereal” in sensory tests, reducing “cardboard” and “painty” flavour attributes and keeping cereals fresh for up to 12 weeks.
Luping Ning, group manager of bars, confections, snacks, and cereals said: “Guardian Toco 30P simplifies the process by incorporating antioxidants into the dry mix and eliminates the need for additional equipment and clean up.
“This new antioxidant solution in a cost-effective powder form helps to reduce expenses while improving productivity.”
