Salt of the Earth has launched a new version of its sodium reduction ingredient, Umamix, with a bolder flavour profile.
Umamix Bold is designed to simultaneously reduce salt levels and boost flavour, and is all-natural, being made from a proprietary combination of sea salt, tomato concentrate, and mushroom and seaweed extracts. It also helps to eliminate the use of monosodium glutamate (MSG) in savoury food applications and meets consumer demand for healthier and clean label products: Umamix Bold is non-GMO, MSG-free and does not contain any artificial colours, preservatives or E-numbers, the Israeli company claimed.
A successful trial conducted with a leading processed meat company in Israel showed that replacing salt with Umamix Bold in sausages can improve their flavour and easily reduce sodium content by as much as 30%, it added.
Salt of the Earth marketing manager Revital Ben Shachar said: “Consumers are aware of the World Health Organization’s call to reduce sodium and, at the same time, they demand cleaner products with natural positioning. We don’t consume food just to feel satiety; we want so much more from our food today. For example, eating in a restaurant involves all of our senses — appearance and texture are not enough. A food must be healthful, look great and taste delicious. Umamix Bold has an exotic taste that can enhance the flavour of a variety of products.”
The new ingredient joins Salt of the Earth’s Umamix line, which, as FoodBev reported back in November, can help to lower the amount of salt in hamburgers and processed meats by as much as 45%.
