For the first time, manufacturers can scientifically, objectively and repeatedly measure shred-ability and slice-ability, enabling them to identify the most appropriate ingredients for their end products and to optimise their equipment specifications and settings.
In a food production environment, cheese, for example, must be able to withstand intense processing without clogging up machinery, and texture analysis helps manufacturers evaluate the mechanical properties that will influence its performance and process-ability.
The new grating rig is used in conjunction with Stable Micro Systems’ TA.XTplus texture analyser and comprises a grating platform consisting of interchangeable grating faces and a sample block holder that acts as a sample template, and, during the test, holds the sample in place.
The texture analyser is used in a horizontal position to ensure a constant application of force onto the sample. This configuration also means that samples can be tested repeatedly over several cycles without the need for reloading.
