King Cyrus of Persia contains pistachio flavoured ice cream, pistachio nuts and swirls of syrup made from cinnamon, honey and dates. ‘Pioneers of ice cream within the Persian Empire would collect the last of the winter snow and combine it with grape juice to create a refreshing treat’.
Emperor Jing Zong is red bean flavoured ice cream, which offers coconut pieces and a swirl of sweet red bean syrup. Connoisseur says that on hot nights in China’s Imperial Palace, under emperor Zong’s rule, ‘dessert was a unique creation of ice, buffalo milk and ‘dragons brains’’.
