Israel-based ingredients innovator Salt of the Earth has launched a new umami essence sea salt ingredient that can cut sodium levels by up to a half.
Specifically designed for a comprehensive range of sauces, toppings and dressings, the all-natural ingredient blends sea salts with natural vegetable extract to produce a “distinctive umami flavour”.
The umami essence sea salt ingredients is highly soluble, vegan-friendly and is free from monosodium glutamate (MSG).
Aliza Ravizki, research and development manager for Salt of the Earth, said: “This innovative ingredient can help food manufacturers keep the consumer-craved salty flavour while maintaining a low amount of sodium in the final application. It’s a ready-to-use liquid formulation that can naturally intensify umami, the so-called fifth taste.
“This is the first specifically umami-enhancing ingredient developed by Salt of The Earth. We tested the formulation in a range of sauces, pizza toppings and more and achieved outstanding results in terms of saltiness and savoury flavour. This superior ingredient enables clean labeling while avoiding MSG and enhancing the final product flavour.”
Salt of the Earth marketing manager Giorit Carmi added: “The characteristics of umami essence sea salt help food scientists innovate healthier, reduced-salt recipes that contain only natural ingredients and don’t compromise flavour. It provides food manufacturers a much simpler way to include a clean label claim on products and to comply with the global salt reduction agenda of cutting sodium in processed foods.”
