Bühler Group introduces OptiBake technology to enhance wafer production

Bühler Group has launched OptiBake, an inductively heated wafer oven designed to improve energy efficiency and production quality in the wafer industry. This new technology aims to reduce energy consumption by 50% compared to traditional gas-fired ovens, addressing both operational costs and environmental concerns.


OptiBake uses electric induction heating, which generates heat directly within the baking plates through electromagnetic fields. This method eliminates the need for combustion, resulting in no direct emissions of carbon dioxide, carbon monoxide, nitrogen oxides or other pollutants typically associated with gas-fired systems. The shift to this technology reflects a broader trend in the food manufacturing sector toward more sustainable practices.


Sandra Lutz, head of business unit wafer at Bühler Group, highlighted the importance of combining quality with operational flexibility. The oven's design allows for precise temperature control across individual baking plates, enhancing product consistency and enabling manufacturers to adapt to varying production demands.



The introduction of OptiBake comes at a time when manufacturers face increasing pressure from rising CO₂ taxes and volatile energy prices. “With rising CO2 taxes, volatile energy prices and changing consumer demands, companies must act now to stay ahead,” says Johannes Greil, head of product management wafer at Bühler.


“OptiBake represents a milestone in industrial baking technology, delivering increased quality, efficiency, and flexibility. This powerful combination equips customers to thrive today and remain competitive in the years to come.”


Additionally, the environmental benefits of using OptiBake are heightened when powered by low-carbon electricity sources, further supporting sustainability initiatives within the industry. The reduction in energy consumption may also present opportunities for tax incentives and subsidies.


Bühler's partnership with Loacker, an Italian confectionery company, underscores the practical applications of OptiBake. Loacker has been working with Bühler since 2020 to explore zero-emission wafer production, and anticipates that the new oven will significantly enhance energy efficiency while ensuring product quality.
