A new sake brand, Kay Sake, aims to bring the traditional Japanese beverage to the modern aperitif scene, blending ‘Eastern tradition with Western style’.


Crafted at the Aumont Brewery in Niigata, Japan, the brand-new beverage aims to ‘demystify’ sake for consumers in the West who may be uncertain about how to select and serve sake due to Japanese labelling.


The 15.8% ABV aperitif is gluten-free and is also free of sulphites and additives, made from just three ingredients – water, malted rice and yeast. It is designed to be served with ice, neat or as a low-alcohol alternative for commonly used spirits in cocktails.


According to the brand, each bottle has been created using high-quality local rice and waters of Niigata’s Kaji River. Kay Sake added that the region’s clean air, low temperatures and moderate snowfall create the ‘perfect environment’ for the slow, meticulous sake crafting process.


The beverage sits within the premium Junmai Daiginjo category of sake, offering a natural and smooth palette which has been achieved by polishing away 50% of the rice kernel to reveal the refined flavours. It also contains fruity notes of fresh green apple and pear, finished with a hint of umami.


Marcel Wanders, creative vision behind Kay Sake, said: “The air is light, and our spirits are lighter than ever. Kay Sake was born from a dream and pure interest. It is inspired by Niigata’s terroir, fine qualities and of course the traditions, practices and beautiful surroundings of Aumont Brewery.”


The drink is available in the UK from Hedonism Wines and Gerry’s Wine & Spirits, priced at £35.
