US flavour producer, FlavorSum, is expanding its portfolio of solutions to include flavours with modulating properties (FMPs).
FMPs can help to address specific taste challenges in foods and beverages, such as masking bitterness, enhancing mouthfeel and mitigating off-notes.
The new line of solutions, FlavorSum Modulate, includes dozens of readily available FMPs for food and beverage brands to incorporate into reformulated or new products. It provides FMPs for ranging applications including beverages, bakery, dairy and alt-dairy, and cannabis and CBD products.
Ibrahima Faye, director of flavour development R&D at FlavorSum, said: “Our flavourists understand the complexity of product development, especially as interest in functional and low-sugar foods and beverages continues to grow. The FlavorSum Modulate portfolio fits with many applications, helping brands deliver desired taste profiles while aligning with label goals.”
The company has initiated three new web resources on bitterness maskers, protein maskers and sweetness optimisation, providing trends and insights about the role of FMPs when formulating with protein, functional ingredients and reduced sugar.
