Australia’s craft spirit industry is booming. There are over 600 premium distilleries producing award-winning gin, whisky, vodka, rum and more across the country – a 20-fold increase over the last decade.
It’s one of the most rapidly expanding and exciting categories in Australia’s artesian food and drink scene, and is increasingly gaining global recognition across the international awards circuit.
What sets them apart?
Wild botanicals sourced from Australia’s native bushland.
From marshmallow leaf to strawberry gum to myrtle pepper, no two recipes are the same.
Alongside indigenous bush ingredients, distilleries source fresh produce like macadamia, pineapple and mango from nearby farmers to create endless exotic flavour combinations.

Wild-grown, native ingredients build unique flavour profiles
Two-thirds of distilleries are in regional locations close to Australia’s tropical rainforests, outback deserts, golden sugar cane fields and pristine beaches. Each climate offers native botanicals, which local distilleries embrace to create new, bold flavour profiles truly unique to Australia. Cinnamon-scented pepper berries, sour Davidson plums and tangy finger limes are some of the aromatic infusions that UK consumers can discover in Australian spirits.
Connect to premium suppliers at IFE 2024
The Antipodes Gin Co are Australia’s first ‘certified sustainable’ distillery, specialising in gin, vodka and espresso liqueur. Its creative craft gin flavours include watermelon gin, chai gin, oceanic gin and shiraz barrel gin. Its famous Pink Gin features tart Kakadu plum, chamomile flowers, refreshing citrus and notes of strawberry pink musk sticks.
Billson’s artisan distillery and brewery is Australia’s fastest-growing drinks brand. Its vodka range includes enticing flavours such as strawberries & cream, orange triple sec and apple crumble liqueur. Its huge, diverse RTD range of vodka, gin, cocktails and more uses pure alpine spring water from its own well.
Nil Desperandum is Australia’s most awarded rum brand. Its certified organic rum is made and matured on Australia’s sub-tropical Sunshine Coast, a UNESCO-recognised biosphere. Molasses from sugar cane grown on rich volcanic plains is naturally wild fermented with Woombye water, dunder and muck, then double pot distilled and barrel aged for at least two years in bourbon barrels emptied of sherry and port.
Wolf Lane Distillery’s tropical gins and liqueurs are infused with exotic fruits and rainforest botanicals sourced locally from luscious North Queensland on the Great Barrier Reef. It specialises in gin, coffee liqueur (made from single-origin coffee) and bottled cocktails. Its signature Tropical Gin uses 13 botanicals, including native lemon myrtle, pepperberry and macadamia, with a vapour-infusion of ruby grapefruits, mangoes and finger limes.
Beachtree Distillery was recently awarded the prestigious Craft Producer of the Year ICON award at the World Drink Awards. It is Australia’s only certified Indigenous distillery and most awarded organic distillery producing handcrafted, sugar cane-based spirits created on the Sunshine Coast. Each product is finely crafted with a triple-distilled, four-times-filtered organic sugar cane base.
