Lallemand Bio-Ingredients has announced the acquisition of Solyve, a specialist in enzyme production, as part of its strategy to bolster its offerings in microbial solutions for the food and beverage sector. Solyve, a subsidiary of the InVivo group, is recognised for its expertise in classical enzyme production through solid-state fermentation at its facility in Normandy, France.
Founded in 1989, Solyve has established a reputation for developing high-performance enzymes tailored primarily for winemaking, juice and vegetable processing, and plant-based food applications. This acquisition is expected to enhance Lallemand’s capabilities in enzyme solutions, providing a broader range of products to meet the evolving needs of its customers.
Lars Asferg, president and general manager of Lallemand Bio-Ingredients, highlighted the strategic fit of Solyve within Lallemand's existing enzyme business. “Solyve brings a complementary set of capabilities and products to Lallemand Bio-Ingredients’ rapidly expanding enzyme business,” he said.

“Solyve’s expertise in enzyme solutions will enhance our ability to support customers seeking high performance enzymes across a wide range of food and beverage applications, and will strengthen our drive to bring enzyme innovation to market based on Lallemand’s unique technology platform.”
This acquisition comes at a time when the demand for enzyme solutions in the food and beverage industry is growing, driven by trends towards natural ingredients and enhanced processing efficiencies. Enzymes play a crucial role in improving product quality, optimising production processes and enabling the development of new food products.
Lallemand, a privately held global company headquartered in Canada, operates in more than 50 countries and manages over 50 production facilities. The company specialises in the development and marketing of yeasts, bacteria, fungi and enzyme-based solutions across multiple sectors, including baking, human and animal nutrition, brewing and oenology.
By integrating Solyve’s capabilities, Lallemand aims to leverage its extensive distribution network and technical expertise to deliver innovative enzyme solutions that meet the diverse needs of manufacturers. This move not only enhances Lallemand's product offerings but also positions the company to capitalise on the growing trend toward sustainable and efficient food production methods.
