US food brand Birch Benders has unveiled a new ube mochi-inspired pancake and waffle mix, aiming to deliver a ‘trendy’ twist on a traditional breakfast favourite.
The mix uses purple yams, known as ube in the Philippines, to create pancakes and waffles with a vibrant purple colour and sweet flavour. It combines ube’s unique taste with the texture of mochi, thanks to the use of sweet rice flour in the mix.
Designed for convenience, consumers simply need to add water to transform the pale, dry mix into a vivid purple batter. The product is naturally vegan and gluten-free.
Dan Anglemyer, chief operating officer, said: “We are thrilled to bring our Ube Mochi Pancake & Waffle Mix to breakfast tables across the country. This innovative addition to our product line-up not only offers a delightful burst of colour and flavour but also caters to the growing demand for gluten-free breakfast options.”
The new mix can be found at Whole Foods, Sprouts and online.
